Cafe Cusco, located in Springfield, MO 65803, is a fun little cafe that offers a taste of Peru right in the heart of the Historic C-Street community. The recipes at Cafe Cusco are inspired by the healthy cuisine of Peru and the Andes Mountains and offer a wide variety of gluten-free and vegetarian options.

The privately-owned business was opened in July 2013 by Claire Gidman and her son Joe Gidman. As a student at College of the Ozarks, Joe met his best friend, Rodrigo, who is from Lima, Peru. Rodrigo shared many stories about Peru with Joe, and they decided to travel to the country together. Joe fell in love with the culture and its cuisine, and the idea for Cafe Cusco was born.

The restaurant is located in one of Springfield's oldest buildings, which was built circa 1883. The high copper ceilings, amazing woodwork, columns, antique pub bar, and carved wooden covered booths give the place a unique and cozy ambiance. The decor is a mix of warm Latin colors and contemporary lighting.
