In 1995, William's son, Roger, bought the business and developed the concept from a cafe to a steakhouse and event facility. In 2007, the Peppermill in downtown Valentine closed, and Roger's son, Robert, re-opened the Peppermill and E.K. Valentine Lounge on highway 20 in Valentine. Since then, the business has become a bar and grill concept with a strong emphasis on Nebraska steaks. In 2011, a banquet facility was added, which has a total capacity of over 500.

Robert Joseph, a lifetime resident of Valentine, NE, and a 2001 graduate of the University of Nebraska School of Business, is the current owner of the Peppermill. His expertise in business has helped the Peppermill thrive over the years, becoming a beloved local institution.
