The establishment's muse, Mother Bubbles, was the grandmother of the original owner and was born Michele Bouvier around 1840 in Deauville, a city on the Atlantic coast of France. One thing she loved during her life was champagne, earning her the nickname "Mother Bubbles," or Mere Bulles in French.

In 1985, Rodney Wise opened Mere Bulles on Second Avenue in a then-struggling area of downtown Nashville. The lively, welcoming, and entertaining atmosphere of the restaurant was inspired by Mother Bubbles herself and was instrumental in the revitalization of the now-vibrant Second Avenue and Broadway district of Nashville.

In June 2000, Mere Bulles moved south of Nashville to Maryland Manor, a historic former estate home in Brentwood. The Mansion itself was built in 1942 with bricks salvaged from a previous historic building that was torn down near the site.

Owned by Steven Smithing, a 22-year veteran of the Nashville restaurant scene, Mere Bulles has been a must-visit destination for over 15 years. Smithing previously managed the renowned Green Hills Grille and conceptualized the Bistro 215 and Caney Fork Fish Camp restaurants. Along with his Chef-brother Christopher, who he has worked with since 2003, Steven has created a dining experience that leaves customers raving and coming back for more.
