The George Street Co-op has been serving the community for over 45 years. The store was founded in 1973, by ten people from the Rutgers Vegetarian Club who were looking for high-quality, bulk vegetarian food to supply to their membership. The Co-op started as a buying club and for five years, it operated from one member's garage near George Street. In 1978, the group started renting a small space at 285 George St, and on April 26th of the same year, they filed papers to form The George Street Co-op. Eleven dedicated members comprised the new Co-op's initial Board of Trustees.

Since then, the Co-op has grown and thrived in its new location. It expanded into the space next door and eventually bought the building at 89 Morris Street, but retained the name George Street Co-op. Today, the Co-op is one of the oldest natural food stores in the country and has become an integral part of the New Brunswick community.
