The restaurant is named after its founder, Clemente Cittoni, who was born in Northern Italy near Lake Cuomo in 1938. Clemente's passion for cooking started when he began working at what is now the Historic Depot Restaurant on Soscol Ave in Napa. He continued to learn and grow as a cook there until he eventually bought the business and owned it until he sold it in around 2004. After selling the restaurant, Clemente worked at a local deli cooking their recipes until he decided to entertain the idea of opening an Italian Takeout with the owner of Val's Liquors. They got together on the idea, and Clemente's at Val's was born on February 28, 2008!
